Joel's Jambalaya
- In one bowl, combine onion, green pepper, garlic, and celery. In another, combine chili sauce, water, tomatoes, bay leaf, thyme, salt, hot sauce and cayenne.
- Heat oil. Sauté chicken and sausage for 5 minutes, then add the bowl with the dry ingredients: onion, green pepper and garlic.
- Sauté for a few more minutes, then add the other bowl: chili sauce, water, tomatoes, bay leaf, thyme, salt, hot sauce and cayenne.
- Cover and simmer, about 30 minutes.
- Serve over rice.
