Winter fruit compote

What you'll need

A slow cooker recipe - Great on its own as a dessert, or a topping for whatever your heart desires. Gluten and dairy free (sans yogurt topping).

Serves: 4

Cooking time: 2.5 hours

  1. Put the pound of dried fruit, orange juice, cardamom pods, tea bags, and lemon and orange peels in the slow cooker. Do not turn on the slow cooker yet. Pour 3 cups of boiling water over the mixture, then cover to steep for 30 minutes.
  2. Remove and discard the tea bags. Add the cinnamon and brown sugar and stir until it dissolves. Re-cover the cooker, turn it to HIGH, and cook 1 1/2 hours. 
  3. Stir in cranberries, currants and raisins, re-cover and cook and additional hour until all the fruit is soft and the liquid is lightly syrupy.
  4. When ready to serve, dish up the fruit with the syrup alongside the yogurt and top with toasted nuts. This would also be great with ice cream, of course! Or for breakfast with oatmeal!
