Turmeric Rice

What you'll need

  • 2 cups basmati rice
  • 3 tablespoons vegetable oil
  • 3 unit whole cloves
  • 1 unit bay leaf
  • 4 unit cardamom pods
  • 1 inch cinnamon stick
  • 2 cloves garlic, peeled and finely chopped
  • 1/4 teaspoons turmeric
  • 1 teaspoon salt
  • 2 tablespoons finely sliced chives, or green part of green onions
  1. Put rice in bowl and rinse and drain. Leave in strainer over bowl.
  2. Put oil in heavy sauce pan, set over medium-high heat. When hot, add cloves, bay leaf, cardomom pods and cinnamon. Stir once or twice, then add garlic. When garlic is medium brown, add rice, turmeric, and salt. Stir gently for a minute. Add 2.75 cups water, bring to a boil.
  3. Cover tightly, turn down heat to very low, cook for 25 minutes.
  4. Sprinkle with chives or green onion.
