Nutmeg Steak Rub

What you'll need

  • 2 tsbp salt
  • 1 tbsp black pepper
  • 1 tbsp freshly grated nutmeg
  • 2 tsp white sugar

The theory here is that the nutmeg imparts extra smokey, meaty flavor, while not actually tasting like nutmeg

  • Put your steaks on a wire-rimmed rack on a baking sheet
  • Set aside a couple teaspoons of the mixture.
  • Rub the rest on all sides of the steak, pressing in to make sure it sticks. 

The recipe this came with drew inspiration from Argentina, recommending that you cook the steak in the oven at 250 degrees for 45 minutes, letting it reach an internal temperature of 110 degrees, and then finishing it by either a quick sear or a quick slap on a hot grill. (Sprinkle with the remaining spice mixture before serving, of course.)
