Huckleberry Syrup

What you'll need

  • 1 cup fresh huckleberries
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 1/2 teaspoons cornstarch, mixed with 1.5 teaspoons water
  • 1 unit lemon (zest, and half of its juice)

Serve with multigrain pancakes.

  1. Combine berries, water and sugar in a saucepan over medium heat until the sugar is mostly dissolved. Add the cornstarch mixed with water and bring everything to a boil, then reduce to a simmer for 5 minutes. Remove from heat to thicken for 10 minutes.
