Banana Ginger Bran Muffins

What you'll need

  • 12 tablespoons butter
  • 2/3 cups sugar
  • 2 1/2 cups mashed bananas
  • 3 unit eggs
  • 2 cups flour
  • 1 1/2 cups oat bran
  • 3/4 teaspoons salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups baking soda
  • 2 tablespoons chopped crystalized ginger

Serves: 18 muffins

  1. Preheat the oven to 375 and grease or line muffin pans.
  2. In a standing mixer, beat the butter at medium speed until creamy. Add the sugar to blend well. Add bananas and eggs and mix until the batter is light and smooth.

  3. In a separate bowl, whisk together the flour, bran, salt, spices and soda, then add to the batter and mix well.  Stir in the ginger. 

  4. Spoon batter into the muffin pans, almost filling them. Bake 15-20 minutes. Serve warm.
