Joel's Jambalaya

What you'll need

  • 2 tablespoons oil
  • 1 pound boneless chicken breast, cut into small cubes
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 2 cloves garlic
  • 2 sticks celery
  • 1 unit bay leaf
  • 1/2 cup chili sauce
  • 1/4 cup water
  • 14 1/2 ounces canned tomatoes, chopped with juice
  • 8 ounces andouille sausage
  • 1/2 teaspoon dried leaf thyme, crumbled
  • 1 dash pepper
  • 1 dash cayenne pepper
  • 3 dashes Louisiana hot sauce
  1. In one bowl, combine onion, green pepper, garlic, and celery. In another, combine chili sauce, water, tomatoes, bay leaf, thyme, salt, hot sauce and cayenne.
  2. Heat oil. Sauté chicken and sausage for 5 minutes, then add the bowl with the dry ingredients: onion, green pepper and garlic.
  3. Sauté for a few more minutes, then add the other bowl: chili sauce, water, tomatoes, bay leaf, thyme, salt, hot sauce and cayenne.
  4. Cover and simmer, about 30 minutes.
  5. Serve over rice.
