Southwestern Chicken Bean Salad

What you'll need

  • 2 unit medium scallions, chopped
  • 1/2 unit medium bell pepper, chopped
  • 15 oz. canned black beans, rinsed and rained
  • 2 ears corn off cob (kernels)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon corn oil
  • 8 ounces chicken breast, cooked, skinless, chopped
  • 2 tablespoons reduced-sodium taco seasoning (half a 1.25-ounce packet)
  • 4 tablespoons freshly chopped cilantro
  • 4 tablespoons fat-free sour cream

Serves: 4

  1. Combine scallions, peppers, beans and corn in a large bowl. Toss until well-mixed.
  2. Add lime juice and oil to bean mixture. Toss to coat. Add chicken, taco seasoning and cilantro, toss. Top with sour cream and serve.
